Prep the mushrooms:
- Add apples, soy sauce, honey, sesame oil, ginger, pepper, garlic, and white onions into the food processor. Blend on high until smooth.
- Place sliced mushrooms, scallions, and red bell pepper into a bowl. Pour the marinade on top, then mix to coat well.
- Place mushrooms into the refrigerator and let marinate for 30 minutes.
Cook the vegetables:
4. Remove the crisper plate and center divider from the air fryer basket.
5. Place sprouts, carrots, spinach, and courgette into the corners of the basket.
6. Select Grandzone, select the Air Fry function, adjust temperature to 200°C and time to 10 minutes, then tap Start/Pause.
7. Stir carrots and courgette halfway through cooking but keeping them separated. Check on the spinach after 6 minutes of cooking and remove when wilted and golden brown.
8. Remove vegetables when golden brown.
9. Insert the crisper plates into the air fryer basket.
10. Drain the mushrooms from the marinade and place them onto the crisper plate.
11. Select Grandzone, select the Air Fry function, adjust temperature to 205°C and time to 15 minutes, then tap Start/Pause.
12. Stir halfway through cooking.
13. Remove when done and place ingredients separately on a plate. Season bean sprouts, spinach, and carrots with sesame oil, then salt.
Make the red pepper sauce and assemble:
14. Mix the ingredients for the red pepper sauce until well combined.
15. Assemble by placing 150 grams of rice into bowls, place ingredients onto the rice next to each other, and top with egg. Serve with red pepper sauce and mix well before eating.
