Make the Pretzel Dough and Shape
- Place the self-rising flour and Greek yoghurt in a large bowl. Mix with a spatula until a rough dough forms, then switch to your hands and knead until it forms a smooth dough. If the dough is too sticky, add 1 more tablespoon of self-rising flour at a time.
- Shape the dough into a smooth round ball, then divide into 4 equal portions.
- Roll each piece of dough into a long rope. Cut each rope into 12 segments. Use flour as needed to prevent sticking.
Make the Baking Soda Bath
- Bring the water to a boil, then pour into a large bowl. Carefully stir in the baking soda to dissolve.
- Dunk the pretzel bites into the baking soda solution for 15 seconds, then transfer using a slotted spoon to a greased baking sheet.
Bake
- Insert the crisper plates into the air fryer baskets.
- Select Zone 1, select the Air Fry function, adjust the temperature to 205°C and time to 5 minutes. Select Match, then tap Start/Pause to preheat.
- Place an even layer of the pretzel bites onto each preheated crisper plate.
- Select Zone 1, select the Air Fry function, adjust the temperature to 205°C and time to 5 minutes. Select Match, then tap Start/Pause.
- Remove pretzel bites when deeply golden-brown and puffed.
Coat
- Drizzle the melted butter over the cooked pretzel bites and toss to coat.
- Mix the cinnamon and sugar in a shallow dish until combined, then coat each pretzel bite into the cinnamon sugar mixture.
Make the Frosting
- Beat the cream cheese using a handheld mixer until light and fluffy. Add the Greek yoghurt, maple syrup, and vanilla extract. Beat until combined.
- Transfer frosting to a serving bowl and serve alongside pretzel bites.
